Beef ‘Bacon’ salad

Thinly sliced beef short ribs sprinkled with a fragrant spicey rub and cooked in the air fryer
until crispy, served with pearl wheat, sliced heirloom tomatoes and baby spinach salad.

INGREDIENTS

Beef

1 kg Beef short rib, thinly sliced

Marinade 

2 teaspoons Smokey Paprika

1 teaspoon Cayenne pepper / chili powder

½ teaspoon Mustard powder

½ teaspoon Onion powder

1 teaspoon Garlic powder

½ teaspoon Ginger, ground

½ teaspoon Cinnamon, ground

½ teaspoon Coriander, ground

½ teaspoon Cumin, ground

1 teaspoon Salt

¼ teaspoon Ground black pepper

½ teaspoon Meat tenderiser

METHOD

Preparing the rub:

  1. Place the smokey paprika, cayenne pepper, mustard powder, onion powder, garlic powder, ginger, cinnamon, coriander, cumin, salt, black pepper, and meat tenderiser in a bowl and mix.

  2. Place the thinly cut short ribs in a shallow container. Sprinkle the rub over the short ribs on both sides until they are completely covered.

  3. Cover with plastic wrap and refrigerate for 12-24 hours for additional flavour.

Preparing the beef ‘bacon’ short ribs:

  1. Remove the spiced short ribs from the refrigerator. Leave to get to room temperature, about 20 minutes prior to cooking.

  2. Pre heat the air fryer to 200°C for 4-5 minutes. Remove the short ribs from the container and place on the air fryer rack or tray. Spacing the meat next to one another and not overlapping. Air fry in batches. Air fry for at 200°C for 6 minutes. Turn halfway through the cooking period. Cook until crispy.

  3. Serve the hot crispy beef ’bacon’ short ribs with aromatic pearl wheat, sliced heirloom tomatoes and a baby spinach salad of your choice.
