Cheesy crumbed lamb liver nuggets

INGREDIENTS

200g lamb liver, cut into strips

2 cups buttermilk

2 cups breadcrumbs

2 cups chilli bite mix

1 cup cheddar cheese, grated

2 Tbsp paprika

2 Tbsp BBQ spice

Oil for frying

METHOD

1. In a bowl, mix together the paprika and buttermilk. Place the lamb liver into the buttermilk and marinade for an hour.

2. Heat oil to medium heat

3. In a separate bowl, mix the breadcrumbs, BBQ spice and cheese. In a third bowl, place the chilli bite mix.

4. Shake off access buttermilk from the liver strips, dust in the chilli bite mix, place back into the buttermilk then finally coat with the breadcrumbs and cheese mixture. Carefully drop the livers into the oil and deep fry for 2 minutes or until golden brown.

5. Use a kitchen towel to drain access oil.

6. Serve warm or cold with sweet chilli sauce
