Deconstructed bunny chow bowl
You do not get more proudly South African street food than a loaf of bread filled with “slap chips” topped with some spicy lamb meat. We’ve put a healthy twist on The Bunny Chow, in the form of a nutrient packed power bowl with baked orange sweet potato fries and wholegrain croutons.

INGREDIENTS
Lamb
Lamb knuckles (shank slices), 400g raw
Chakalaka, 1 can
Tomato paste, 1 sachet
Green beans, chopped, 1 cup
Sweet potatoes, sliced into chips, 2 cups
Fresh Coriander
Wholegrain bread, 2 slices
Plain yoghurt
Salt and pepper
Olive oil
METHOD
Brown the lamb knuckles over high heat, add the tomato paste and chakalaka and simmer over medium heat without a lid until the meat starts falling off the bone, add the chopped green beans, close the post with a lid and simmer for another 5 min.
Cut the orange sweet potato into chips, sprinkle with olive oil and roast in the oven
Cut the bread slices in cubes, sprinkle with olive oil, herbs and spices of your choice and toast in the oven
Combine the cooked knuckles, sweet potato chips and croutons in a bowl and top it with a scoop of plain yoghurt and fresh coriander
