Green bomb millet and lamb bowl

INGREDIENTS

Lamb

Puled lamb neck, 180g cooked

(slow cooked in white wine and lemon juice)

Dehulled millet, ½ up dry/ 1 cup cooked

Baby marrows, 1 cup raw/ 150g

Green Beans, 1 cup raw/ 150g

Broccoli, 1 cup raw/ 175g

Juice and zest from 1 lemon

Mint leaves, 1/3 cup/ 6g, chopped

Salt and Pepper

Tablespoon grated hard cheese

METHOD

Cook the millet like rice: On the stovetop or microwave, add 3 parts fluid (water or stock) to one part millet- cook until all fluids has evaporated (15-20min)- Do not stir!

Chop the baby marrows, broccoli and green beans and steam it in the microwave
or in a steamer

Combine the cooked millet, pulled lamb, lemon zest, steamed vegetables and chopped mint leaves in two pudding bowls, garnish with grated hard cheese (parmesan or pecorino) and lemon zest- serve warm or cold!
