Pulled lamb keto pizza (with cauliflower base)

INGREDIENTS

Lamb

2 medium cauliflower heads (4-5cups)

½ cup parmesan, shredded

½ cup mozzarella, grated

2 eggs

½ tsp salt

½ tsp Italian herbs

1/2 cup basil pesto

250g pulled lamb

50g feta

Coarse salt

  

METHOD

  1. .Heat oven @ 200°C.Place cauliflower in food processor and pulse until the consistency of rice (or grate it).

  2. Microwave cauliflower for 4 min and drain access liquid. Combine with cheese and eggs. Add salt and Italian herbs.

  3. Mix until the consistency of a dough.

  4. Spread dough onto parchment paper in rectangular shape. Bake for 10-15 min.

  5. Spread pesto over bases and top with lamb, feta and coarse salt. Bake for 5 min.
