Lamb Kofta

INGREDIENTS
500g minced meat
2 Tbsp chopped fresh coriander
1 Tbsp chopped fresh rosemary
1 Tbsp chopped fresh thyme
1/2 tsp ground cumin
1/2 tsp ground coriander
2 tbsp fine breadcrumbs
1 egg beaten
1 Tsp olive oil
1 Tbsp steak spice
Salt
Pepper
12 kebab sticks
Handful coriander or thyme for garnish
METHOD
1. Pre heat oven to 180C
2. In a large, bowl mix together all the ingredients
3. Heat 1 Tbsp canola oil and fry a tiny bit of the minced meat to check for seasoning and adjust if necessary
4. Divide the mixture into equal 4cm*2cm logs. Thread the logs into the kebab sticks lengthwise.
5. Grease a baking tray with the remaining oil. Place the logs onto the baking tray and bake in the oven for approximately 10 minutes or until cooked through.
6. Garnish with fresh herbs. Serve warm.
