Lamb ribs with zucchini fries

INGREDIENTS
Lamb
500g lamb riblets
1 tbsp olive oil or Avocado oil
½ tbsp lemon juice
1 tbsp lamb rub
Zucchini fries
2 large baby marrows
1 large egg beaten
½ cup almond or coconut flour
½ cup Parmesan cheese grated
1 tsp paprika
Pinch of salt and pepper
METHOD
Pre heat oven to 170C.
Rub ribs with lemon juice and the olive oil and spice with salt, pepper and lamb rub.
Evenly space ribs in a single layer on baking rack, roast for 35 min or until tender and cooked through.
While the ribs are roasting, prepare the zucchini fries.
Cut the zucchini in half and into sticks, like fries.
In a shallow bowl, combine the almond/coconut flour, parmesan, paprika and a pinch of salt and pepper. Mix to combine.
Dredge zucchini in egg and then in the flour mixture and place on baking sheet. Generously spray zucchini with coconut oil cooking spray.
Working in batches, place the zucchini fries in a single layer in the air fryer. and Cook for 10 minutes at 180C, or until crispy.
If cooked in oven, bake @ 180C for 20min or until golden brown.
