Meatballs in tomato sauce

INGREDIENTS

3kg lamb minced meat

1 onion finely chopped

8Tbsp fresh herbs finely chopped example basil

10Tbsp fine breadcrumbs

6 eggs beaten

1Tbsp olive oil

6Tbsp ground coriander

6Tbsp steak spice

Salt

Pepper

1kg cheddar or gouda cheese, cut into small 1cmx1cm cubes

3Tbsp canola oil for frying

 

Tomato Sauce

2 onions finely chopped

6Tbsp crushed garlic

6 cans chopped tomatoes

9 bay leaves

1 cup basil finely chopped

6Tsp cumin seeds

4Tbsp sugar

METHOD

1. In a large bowl mix together all the meatballs ingredients except the cheese.

2. Heat the oil. Fry a tiny bit of the minced meat to check for seasoning and adjust if necessary

3. Divide the mixture into equal round balls and stuff with the cheese cubes

4. Brown the meatballs in batches on the pan. Keep turning them in order to brown all round. Do not cook through

5. Set aside the meatballs

 

Tomato Sauce

1. Heat oil in a pan

2 Add onions and cook until soft

3. Add garlic and cumin seeds and fry until fragrant

4. Add chopped tomatoes, sugar, bay leaves and tomato paste. Cover reduce heat to low and simmer for 15minutes

5. Stir in fresh basil, pepper and meatballs and simmer for an additional 15minutes

6. Serve with pasta and garnish with fresh basil.
