Roast Whole Lamb Neck

INGREDIENTS
1 whole lamb neck
1 onion, roughly chopped
2 sticks celery, roughly chopped
1 large carrot, roughly chopped
1 garlic clove, roughly chopped
1 sprig rosemary
1 cup water
Salt
Pepper
METHOD
1. Season the lamb then brown it in an oven proof pan. Remove the lamb and set aside. Remove the pan from heat.
2.Add onion, carrots, celery, garlic and rosemary. Place the lamb neck on the bed of vegetables.
3. Add water and close the pan with a lid.
4. Place the pan in the oven for 2 hours or until meat is tender. Serve with green beans and veggies from the roast.
