INGREDIENTS

1.5kg sheep tripe, thoroughly washed and roughly chopped

1.5 cups vegetable stock

1 Tbsp mild curry powder

1.5 tsp ground paprika

Salt, to taste

METHOD

1. Place all ingredients in the Instant Pot and set to pressure cooker. Set to cook for 1hr 45 min

2. Once done, change setting to sauté. Season with salt and sauté for 3-4 mins.

3. Enjoy with steamed bread or pap


N.B If you are cooking on the stove top, add 1.5 cups of stock and keep adding water as the level goes down. Cook until tripe is tender.
