Spicy Rooibos lamb bowl

INGREDIENTS

Lamb

Puled Lamb Neck, 180g

Carrots, chopped, 2 cups

Orange flesh sweet potatoes, cubes, 2 cups

Sweet potatoes, cubes, 2 cups

White wine, 1 cup

Rooibos tea, 1 cup

Cinnamon, Cumin, Chilli flakes,

1 teaspoon each

Lemon juice

METHOD

Rub the lamb neck with spices and place in an oven bowl with the rooibos tea, lemon juice and white wine. Close the lid and let it roast in the oven for about 2 hours or until the meat falls off the bone.

Toss the sweet potatoes, orange flesh sweet potatoes and carrots in some olive oil and roast in the oven

Serve the pulled neck in a bowl with the vegetables for a piping hot wholesome meal.
