Lamb cut: Ribs

INGREDIENTS

4 tblsps tomato sauce

4 tblsps soy sauce

4 tblsps worcester sauce

4 tblsps chili sauce

2 tblsps golden syrup

1 tblsp chilli powder

1 onion diced

pinch of salt

1kg lamb ribs

1/2 tsp chilli powder

1/2 tsp turmeric

1/2 tsp black pepper

2 tsps ginger and garlic

salt to taste

METHOD

Step 1

  1. Pour oil into a pan to cover the base of the pan.

  2. Add onion until sauteed and soft. Add the rest of the ingredients to a boil.

  3. Add golden syrup and chilli powder. And keep aside.

Step 2

  1. In a pot, add in your lamb ribs and spices.

  2. Add in water and cook till done.

  3. Allow water to reduce and ginger and garlic to braise. Toss ribs through nicely.

  4. Add ribs into the pot with sauce. Toss till evenly coated.

  5. Add ribs to a baking dish, roast on the grill setting to char on the outside.

THE STORY:

Tender lamb ribs cooked in simple spices - coated with a special sauce and grilled to perfection. This is my mother’s famous rib sauce combination that we enjoy on most braai occasions with the family. Succulent ribs flavoured simply and lathered with a delicious sticky sweet and sour sauce.
