Sweet & sour lamb chops

INGREDIENTS
6-8 lamb rib chops
2Tbsp butter
60ml balsamic vinegar
3Tbsp honey
2 cloves garlic, crushed
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried thyme
1 pinch crushed red pepper flakes
Salt
Pepper
METHOD
1. Combine the balsamic vinegar, honey, garlic, oregano, basil thyme and red pepper flakes in a small pot over medium heat. Season with salt and pepper
2. Bring to boil, reduce heat and simmer until the sauce has thickened
3. Season rib chops with salt and pepper
4. In a heavy based pan, melt the butter and add the pork chops. Seal both sides until golden brown. You may transfer the pork chops to a griddle or leave them on the pan
5. Pour the sweet and sour glaze over the pork chops making sure to cover them completely. Grill for a further 2 minutes turning them half way.
6. Serve immediately
